Vida Glow Collagen Brownies

6 tbsp coconut oil
small handful of chocolate chips
2 large eggs, room temperature
2/3 cup coconut sugar
2 tsp vanilla extract
1/4 cup (20 g) cocoa powder
3 Tbsp (24 g) Beauty Blend
1/4 tsp salt

1) Preheat the oven to 176 °C and line a 20x20cm baking pan with aluminium foil, leaving a few centimetres of overhang on the sides to allow for easy removal. Grease the foil and set aside.

2) Add the coconut oil and chocolate chips to a small saucepan set over a low heat. Stir until the oil and chocolate have melted before removing from the heat and setting aside to cool slightly.

3) Using a handheld mixer or a blender, beat together the eggs, sugar, and vanilla extract for about 2 minutes, until smooth and pale. Add the melted chocolate mixture and mix until well combined. Reduce the speed to low and add the cocoa powder, Beauty Blend, and salt, mixing until it’s well combined and scraping down the sides of the bowl as necessary. The batter should be thick and smooth.

4) Pour the batter into the prepared pan, spreading it evenly with a greased spatula. Bake for 25-30 minutes, until the centre is set. Remove from the oven and let cool in pan for about 15 minutes. Cut into squares and serve.
