Friday night pasta –> Avocado Zucchini Carbonara Pasta. Creamy avocado based sauce, crisp bacon, plenty of parmesan, and fresh pasta. Nothing better on a Friday night 👊 Also? Carbs. Cheese. Avocado. <–literally my favorites 😋 got to love Fridays! . 1 pound bucatini pasta 2 ripe, small to medium avocado, halved 1 egg 1/4 cup fresh basil, plus more for serving kosher salt and pepper 6 slices thick cut bacon, chopped 2 small zucchini, cut into ribbons 2 tablespoons chopped fresh thyme or oregano 1 teaspoon crushed red pepper flakes, or to taste 1 cup grated parmesan cheese, plus more for serving . Cook the pasta according to package directions until al dente. Just before draining, remove 1 cup of the pasta cooking water. Drain the pasta. . Blend together the avocado, egg, basil, and a pinch each of salt and pepper. With the blender running, stream in about 1/2 cup of the pasta cooking water. . Cook the bacon until crisp. Add the pasta, zucchini, thyme, and crushed red pepper flakes, to the skillet. Cook 5 minutes. Add the avocado sauce and parmesan, tossing well to combine, adding pasta water to thin the sauce as needed. Season with salt and pepper. Stir in a handful of fresh herbs. . Link in bio.⠀ INGREDIENTS:⠀ 1 package (about 1 pound) gnocchi⠀ 1 tablespoon butter⠀ Olive oil⠀ 1 small onion, diced⠀ Salt and pepper⠀ 1 cup fresh grape tomatoes, whole⠀ 2 cloves garlic, minced⠀ 1 tablespoon whole capers, drained⠀ 1 teaspoon red pepper flakes⠀ 1/4 cup dry white wine⠀ 1 cup canned crushed tomatoes⠀ 1 tablespoon fresh oregano, chopped⠀ 3/4 cup shredded mozzarella⠀ 1/4 cup grated Parmesan cheese⠀ Parsley, for garnish⠀ Basil, for garnish⠀ STEPS:⠀ Preheat oven to 400 degrees. Boil gnocchi according to package instructions. Drain and set aside.⠀ In a 9-inch cast-iron skillet, melt butter and olive oil. Add gnocchi and brown on all sides until crispy, about 5 minutes. Remove and set aside.⠀ Using the same skillet, coat with olive oil and sauté onions until translucent. Lightly season with salt and pepper. Add grape tomatoes and sauté until they burst. Add garlic, capers and red pepper flakes, and cook for another 30 seconds. Deglaze skillet with white wine and reduce by half. Add crushed tomatoes, oregano and shredded mozzarella. Add crispy gnocchi to sauce mixture and top with Parmesan.⠀ Place in preheated oven and bake 20 to 30 minutes or until golden brown and bubbling. Cool for 10 minutes. Garnish with basil and parsley. Link in bio.⠀ INGREDIENTS:⠀ 1/4 cup pine nuts, toasted⠀ 1 medium fennel bulb, thinly sliced⠀ 3 cups radicchio, thinly sliced crosswise⠀ 4 cups torn frisée⠀ 1/2 cup fresh basil, thinly sliced⠀ 3 tablespoons extra-virgin olive oil⠀ 1 tablespoon lemon juice⠀ 1 tablespoon red wine vinegar⠀ 1 tablespoon finely chopped shallot⠀ 1 teaspoon Dijon mustard⠀ 2 teaspoons honey⠀ 1/4 teaspoon kosher salt⠀ 1/4 teaspoon freshly ground pepper⠀ Parmesan cheese for garnish⠀ STEPS:⠀ In a large bowl, toss fennel with radicchio, frisée and basil.⠀ In a small bowl, whisk together oil, lemon juice, vinegar, shallot, mustard, honey, salt and pepper.⠀ Toss the salad with the vinaigrette and pine nuts.
